Here is my recipe for tomato pie.
You will need
a 9" pie shell-unbaked 4 to 5 medium tomatoes 1/2 teaspoon salt 1/4 cup basil leaves 1 cup mozzarella cheese-grated 1 cup sharp cheddar cheese-grated 3/4 cup mayonnaise 1 teaspoon pepper 1/2 cup buttery Ritz crackers-crushed(12)
Oven 350 degrees
1. bake pie crust
2. put tomatoes on a paper towel and sprinkle with salt. Leave for 10 minutes...then pat dry.
3. Layer tomatoes and basil in pie shell. Save some tomatoes for the top of the pie.
4. In a bowl stir mayo, cheeses, and pepper. Spread misture over tomatoes.
5. Sprinkle with cracker crumbs and arrange the rest of the tomaotes on to[
6. Bake 40 to 45 minutes...

I can't wait to try it, maybe this weekend! Do you eat it as a main dish? I'm pretty sure my meat & potatoes husband would nix that idea, but I could eat home-grown tomatoes as the main every day.

I serve it as a main with a salad side...
You could put hamburger in the pie but I like mine straight up.
But it would make a good side too.

Just want you to know I haven't had a chance to try this yet - my tomato plants are absolutely loaded but we hit a cool spell and they aren't ripening fast enough for me!!! I eat them like crazy fresh sliced and in BLTs so I don't have extra ... yet ...
